Super Bowl Snacks: 10 Recipes for the Perfect Party

So you’re throwing a Super Bowl party this year – and after giving it some thought, you’ve decided to whip up your own Super Bowl snacks. You don’t need the skills and talent of Joel Robuchon or Pia Leon to pull this off; most of the 10 Super Bowl recipes below are simple enough, all you really need is the list of ingredients to throw together. Without further ado, here’s our list of 10 recommended Super Bowl recipes here at Bodog Sportsbook, your home for the best Super Bowl bets in Canada and across the Americas.

SUPER BOWL PROP SHEET

1. Guacamole

You gotta have guac. This Mexican staple literally means “avocado sauce,” and not unlike the five mother sauces in French cooking, you can use guacamole in combination with the other four dips you’ll see below. Opt for California avocados (you may have to do some sourcing) if you’re worried about the cartels in Mexico.

Each of these dips requires about 30 minutes of prep time, most of that spent dicing vegetables. As a general rule, each dip should also stand for at least 30 minutes in the open air to let the flavours co-mingle; ideally, you’ll make these the day before and let them refrigerate overnight.

We’re also using recipes for approximately 12 servings, which may or may not be too small for your Super Bowl party. Multiply/divide ingredients as required for your crowd. Now, on with the guac:

– 6 avocados (Haas or similar)
– 4 Roma tomatoes
– 2 cloves garlic
– 2 limes
– 1 medium onion
– 1 jalapeno pepper
– 1 handful cilantro
– I tsp. each cumin, cayenne, salt

2. Pico de Gallo

Moving on to the salsas (literally “sauce”), these dips became popular across North America in the 1980s, especially the tomato-based ones. You’ve almost certainly had the standard out of a jar; now it’s time to elevate your taste buds. Pico de gallo (“rooster’s beak”) actually covers a wider range of sauces in Mexico, some using fruits like papayas. The more familiar version below is typically referred to as salsa mexicana.

– 24 Roma tomatoes
– 6 red onions
– 6 jalapenos
– 2 limes
– 2 handfuls cilantro
– salt to taste

3. Salsa Verde

The other category of salsas is the green one, based primarily on tomatillos, aka the Mexican husk tomato. These are available at most major supermarkets in Canada, although it might be a coin flip whether your local grocer has it in stock right this minute.

– 1 pound tomatillos (about 6-8 medium)
– 1 medium white onion
– 1 jalapeno
– 1 1/2 tsp. olive oil
– 1 handful cilantro
– salt to taste

4. Poblano Crema

By now you’re probably getting the hang of these sauces, but this one ups the ante by asking you to char and peel the poblano pepper (use spicier green chiles if you prefer) before you throw everything in the blender. Just not the skins.

– 6 poblano peppers
– 1 cup sour cream
– 4 cloves garlic
– 2 limes
– 1 handful cilantro
– 1/2 tsp. cumin
– salt to taste

5. Mexican Street Corn

There are hundreds of variations on esquites, or elote en vaso (“corn in a cup”). The corn is boiled until tender, or char-grilled and stripped off the cob, then you dump all that tasty stuff over the top and stir it in lovingly.

– 12 cups/ears corn
– 1 medium red onion
– 18 green onions
– 1 avocado
– 1 large red bell pepper
– 3 jalapeno peppers
– 6 limes
– 1 handful cilantro
– 6 tbsp. sour cream
– 6 tbsp. Mayonnaise
– 3 tsbp. olive oil
– 1 1/2 cups cotija cheese (or feta)
– 1 1/2 tsp. each cumin, paprika
– salt and pepper to taste

6. Super Bowl Nachos

We’ve got our five sauces prepared and set aside to get all tasty, so let’s assemble the next two entries in our Super Bowl snack parade. Nachos are about as simple as snacks get; this Tex-Mex must-have is just tortilla chips with whatever you want on top, although cheese is a must. You could make a sixth cheese sauce in advance, or you can just shred some cheese and sprinkle it on the chips before you pop the whole thing in the oven and bake for, say, 10 minutes at 350F. Your oven may vary.

Next layer: meat. That’s if you and your guests are into meat, of course. As with the five sauces, you can prepare your meats ahead of time and apply them to any of these five dishes as you see fit. Ground beef is a classic on the Tex side of the border, while pork (preferably in the form of carnitas) is king on the Mex side. Chicken is a healthier choice, but you might find it works better in our next application than on nachos.

How should you cook your meat? If you don’t already have one of those sous vide sticks that started becoming popular around 10 years ago, and you care about delicious food, go get one immediately. Then slow-cook your meat overnight, take it out of the bag closer to party time, and do a “reverse sear” to get that surface nice and brown. Let the meat stand under an aluminum foil tent for about 10 minutes before pulling/chopping/shredding.

Once you’ve got your hot bits of meat all over your hot and cheesy chips, hit those nachos with your room-temperature sauces that you’ve already taken out of the fridge. Your Super Bowl party has now officially begun.

7. Super Bowl Tacos

Here’s another great thing about our modular Super Bowl snack set-up: You don’t have to spend so much time in the kitchen while the Big Game is on. Everyone’s got Super Bowl prop bets to keep track of. That being said, you already have just about everything you need for our next dish (which you can treat as a main course, although all of these are meant for grazing), and you can easily prepare everything else you need for a proper Super Bowl taco bar ahead of time.

You could make your own tortillas, but unless you do this on the regular and people are impressed, you may as well buy good ones from the store. Grab some flour tortillas and some corn tortillas, get your sauces and meats arranged, do some refried beans and rice, cut up several dozen lime wedges for squeezing, and let your guests do the work of assembling their tacos to their liking.

8. A Light Dessert

Who are we kidding, we’re having S’More pizzas. Here’s what you’ll need:

– graham crackers (crushed)
– mini marshmallows
– dark chocolate pieces
– slivered almonds
– a dash of salt, chili powder and cayenne

The amounts will depend on how many of these you make; just buy more than you think you’ll require, and keep serving these up one at a time until people seem ready to move on. The ratio is about eight ounces of chocolate for every cup of graham crackers and three cups of marshmallows.

This will actually be more like a S’More tostada, since we’re going to be using those flour tortillas as our base. Toast the almonds, then fry up the graham cracker crumbs with the spices for about 2-3 minutes in butter and set aside. Dump some chocolate pieces and marshmallows on a tortilla, bake for 3-5 minutes at 400F, sprinkle with graham cracker and almonds, and let rest for another 3-5 minutes.

9. Jalapeno Poppers

Not everyone will want to eat those sweets, or maybe they will, but they’ll want to keep snacking throughout the night either way, so here’s an easy treat that people can nibble on while they compare notes and see who’s made the best Super Bowl prop bets so far. We’ll be using those jalapenos again; chop the tops off, remove the seeds, then fill the peppers with some mixture made from the following:

– 32 ounces cream cheese
– 8 cups any white cheese (grated)
– 4 packages onion soup mix

You’ll also need about four pounds of bacon strips to wrap those peppers in. Grill over medium heat until the bacon is crisp, and serve with the poblano crema, salsa verde or some pre-bought ranch dressing (you’ll need about two bottles’ worth).

10. Pisco Sour

Okay, it’s from South America (Peru/Chile) and not Mexico, but it’s got exactly what you’ll need to wash down all that delicious food. This is in addition to the various refreshing Mexican beers you’ll be serving up. We’re doing the simple Chilean version without the egg whites; shake, strain and serve over ice, make some proper lemonade as well, and cheers to a Super Bowl party well done.

– 60 ml Pisco
– 30 ml lime juice
– 20 ml simple syrup
